I love me a good Cobb Salad.
So here I am, at Flo’s V8 Cafe, looking over their new menu … and I see they have a Cobb.
The Friendly Cast Member taking my order asks what kind of dressing I want – Thousand Island or Ranch. The Ranch is “house made.” Perfect. That.
The salad arrives, and it’s good-sized. Everything’s there: a big bed of lettuce, covered with sliced egg, chicken, corn, blue cheese, grape tomatoes, bacon bits. It all looks pretty appetizing.
The Ranch comes on the side. I drizzle some dressing, and get to work.
The individual ingredients are just OK. I give them a B-minus. The tomatoes are a little soft. The corn is a little soggy. The egg and chicken are both kinda bland. The whole thing just screams, “recently refrigerated!” to me.
(The blue cheese is actually pretty good, and a bit on the tangy side. I liked it a lot.)
The dressing, however, is nice. Very nice. It covers up the softness and the sogginess and the blandness of the ingredients, and ties everything together.
I take a few more bites. The dressing’s the thing. The ingredients are just there for show, seems like. This is all about the house-made Ranch.
Unlike the Cobbs at the Plaza Inn or Storytellers Cafe, this isn’t a fresh salad. It’s a refrigerated salad with good dressing on the side. And you can do a reasonable job of making the salad work, if you’re artful about how you use the dressing. But in the end, it doesn’t come together.
